Steak with chimichurri sauce

  • ½ tsp chilli flakes

  • 2 x 125g rib-eye or sirloin steaks

Steps

  • To make the chimichurri, blitz theparsley, oregano, garlic, shallot and chilliflakes in a food processor or chop veryfinely by hand.
  • Add 2 tbsp of the oliveoil, the lemon juice, vinegar and someseasoning, and pulse to combineeverything to a saucy consistency.Rub the remaining oil and a littleseasoning into the steaks.
  • Heat a griddleor frying pan and cook the steaks for2-3 mins on each side or until done toyour liking. Rest for a few mins, thenspoon over the sauce and serve withfries and salad.
