  • 1/4 teaspoon freshly-ground black pepper

Steps

  • Heat the lard in a large, heavy skillet over high heat to 350 F.
  • Combine the remaining ingredients in a large bowl, stirring until well-mixed. Drop the sweet potato mixture into the hot lard - each latke should be about 1/4 cup of the mixture.
