Cauliflower Crust Pizza

Ingredients

  • 1/4 cup almond meal
    Gluten Free;Health Foods;Baking
  • 1 medium head of cauliflower
    Produce
  • 1 egg, beaten
    Milk, Eggs, Other Dairy
  • 1 tsp garlic powder
    Spices and Seasonings
  • 1 tsp Italian seasoning
    Spices and Seasonings
  • 3/4 cup freshly grated mozzarella cheese
    Cheese
  • 1/4 cup freshly grated Parmesan cheese
    Cheese
  • Whatever pizza toppings you like
    Baking
  • Salt and pepper to taste

Steps

  • Preheat your oven to 400 degrees F and line a baking sheet with foil and spray it with cooking spray. Using your food processor, pulse the cauliflower in batches until it looks like rice.
  • Place the cauliflower "rice" in a bowl and microwave it for 6-8 minutes or until soft and allow it to cool.
  • Add the remaining ingredients [except pizza toppings] to cauliflower and mix well. Turn the mixture out on top of the foil and press down in to pizza shape.
  • Bake until crust is golden brown, about 25 minutes, then top with pizza toppings and bake for another 10 minutes. Tada!
