Ingredients

  • 1 cup dry brownie mix

  • 1/2 cup mini chocolate chips
    Baking
  • 2 cream cheese, softened (8 oz. each)

  • 2 eggs
    Milk, Eggs, Other Dairy
  • 1 cup Cool Whip
    Milk, Eggs, Other Dairy
  • 1 1/2 cups Oreo crumbs
    Sweet Snacks
  • 1/4 cup sugar
    Baking
  • 1 teaspoon vanilla extract
    Baking

Steps

  • Place a small spoonful of crumbs in the bottom of mini muffin liners and set aside.Beat the cream cheese and sugar until creamy.
  • Add the eggs and vanilla and cream again. Stir in the dry brownie mix and mix again. Stir in the chocolate chips by hand.
  • Place a small spoonful into each prepared mini muffin liner. Fill the liners almost to the top.
  • Bake at 350* for 17 minutes. let cool completely. Top with Cool Whip and sprinkles just before serving. Keep refrigerated. Makes about 48 mini cheesecakes.
