Ingredients

  • 1 avocado, smashed
    Produce
  • 2 small flour tortillas
    Bakery/Bread;Pasta and Rice;Ethnic Foods
  • 1 tsp. olive oil
    Oil, Vinegar, Salad Dressing
  • salt and pepper to taste
    Spices and Seasonings
  • 2 ounces sharp white cheddar cheese, cubed
    Cheese
  • 2 Tbs. sun-dried tomatoes
    Canned and Jarred;Produce

Steps

  • Heat the oil in a small non-stick skillet over medium heat.
  • Place one tortilla in the pan. Layer half of the cheese on top, slather on the avocado, layer the sun-dried tomatoes and then the rest of the cheese and sprinkle with salt and pepper. Top with the additional tortilla.Cook for about 4 minutes on each side, until the tortillas are golden brown and the cheese starts to melt.
  • Cut and serve.
