Cocoa Nib Coconut Oatmeal Cookies

  • 3/4 cup quick rolled oats

  • 1/2 teaspoon salt

  • 1/3 cup + 1 tablespoon white sugar

  • 3/4 cup whole wheat flour

Steps

  • In a large mixing bowl beat together butter, white sugar, brown sugar, salt, baking soda, baking powder and vanilla extract.
  • Add in egg and mix till smooth, scraping down the sides.
  • Add in whole wheat flour and quick rolled oats.
  • Mix till combined.
  • Mix in apple cider. Fold in toasted coconut and cocoa nibs. Cover bowl with plastic wrap and let cool in the refrigerator for at least 3 hours. Pre-heat oven to 375 degrees once chilled. Scoop (about 3 tablespoons) of dough onto a cookie sheet and bake for 13-14 minutes until brown and delicious.
