Breakfast Tacos: ATX Inspired

Ingredients

  • Avocado slices

  • 1/2 tsp baking soda

  • Butter or oil, for cooking

  • 2 chorizo sausages, finely chopped

  • 2 tbsp coconut flour

  • 2 organic eggs

  • 4 eggs, scrambled

  • your favorite hot sauces

  • 1/2 cup non-dairy milk
  • 1 large onion, sliced

  • 1 tbsp palm shortening or butter

  • Optional: 1 cup refried beans

  • Dash Himalayan sea salt

  • 2 cups spinach

  • 1/2 cup tapioca flour

Steps

  • In a bowl mix together dry ingredients
  • Add in wet and mix well
  • In a skillet heat oil or butter over medium heat
  • Pour batter slowly into the middle**
  • Let cook for 3 minutes or so and flip
  • Cook for an additional 2-3 minutes, or until tortillas are fully cooked
  • Continue with remaining batter and set aside
  • Heat 1 tablespoon oil in skillet
  • Add in sliced onions
  • Cook over low/medium heat, stirring often, until onions are brown (but not burnt)In the same skillet add spinach and saut until wilted, set aside
  • In a skillet heat 1/2 tablespoon butter or oil
  • Finely chop or grind chorizo and add to the skillet
  • Add in mixed eggs and scramble together for 4-5 minutes until cooked
  • Set aside
  • Assemble tacos by spreading optional refried beans, then layering eggs, spinach, and onions
  • Top with your favorite hot sauces and serve
