Skinny Cottage Cheese Pancakes

Ingredients

  • 1 teaspoon baking powder

  • 1 banana, peeled and sliced or mixed berries

  • 1/4 teaspoon cinnamon

  • 1 tablespoon coconut oil, divided

  • 1 cup cottage cheese

  • 3 eggs

  • 1/2 cup flour

  • 2 tablespoons raw honey or real maple syrup
    Cereal
  • 1/8 teaspoon kosher or sea salt
    Spices and Seasonings
  • 1/2 teaspoon vanilla

Steps

  • Whisk together wet ingredients. In a separate bowl, whisk together dry ingredients.
  • Combine dry and wet and whisk.
  • Place a nonstick skillet or griddle on medium-low heat.
  • Add 1/4 to 1/2 tablespoon coconut oil.
  • Place about 1/4 cup of pancake batter onto griddle with a ladle.
  • Spread in circles with bottom of ladle to form a round pancake.Cook for 2 minutes, or until golden on the bottom, and flip.
  • Place on covered plate to keep warm.Repeat with remaining batter. Should make about 8 pancakes.
  • Serve topped with fruit and a drizzle of honey or maple syrup. Enjoy!
