Chicken Fajita Rice Bowl

  • 1 tsp garlic salt

  • 1 green bell pepper, sliced into thin strips

  • 1 tsp ground cumin

  • 1 to 2 limes, juice of

  • 1 tbsp olive oil

  • 1 red bell pepper, sliced into thin strips

Steps

  • Heat 1 tbsp oil in a large cast iron skillet over medium high heat. Once the skillet is nice and hot, toss in the peppers and onions. Stir occasionally, until the peppers and onions are slightly charred and begin to soften (about 3 minutes). Stir in the chicken, chili powder, garlic salt, ground cumin and squeeze in the lime juice to give everything a good coating. Stir until heated through.Meanwhile fill each bowl with the cooked rice. Top with the fajita chicken and veggies along with any other optional toppings you would like. Enjoy!
